Box #10: A Burst of Colour

I can’t help looking at the clock this summer. The season passes by so quickly. We’re in the thick of things. Lots of interesting produce is available. This week we’re exploring a burst of colours.

Easter Egg Radish - Petite, round, this beautiful multi coloured variety brings a crisp, mild flavour. It’s a source of vitamins and enzymes known for good digestive health. Perfect raw or pickled, you can also roast them with some olive oil, butter and salt to bring out the sweetness in this vegetable.

Beets with Tops - Two dishes in one package! Beet greens are delicious sautéed. We are also looking forward to a cold beet soup at our house.

Yellow - A few songs are coming to mind. Yellow by Coldplay. Yellow Submarine by the Beatles. What else? We’re sending you lots of sunshine via our aloha sweet peppers (featured right), yellow zucchini, yellow plums and yellow zucchini flowers.

Zucchini Flowers - A few suggestions on how to cook with these beautiful flowers.
  • Dip them in a batter (1 cup rice flour, 1/4 cup all purpose flour, 3/4 cold fizzy water) and fry them
  • Stuff them (a mixture of ricotta cheese, salt, pepper and egg), twist the flowers closed, and bake them with some olive oil (add tomato sauce if you like)

  • Cut them into shreds and add them to risotto rice or scrambled eggs. 

    In all cases, remember to pull out and discard the pistil (hard piece inside the flower).
